They are golden beets.
That was my first thought, too. I' not sure I've ever seen a golden beetroot. Once again we see how educational LJ is!
I like them because they have the beet taste, but do not "bleed" quite as much as the darker ones.
I've never seen golden beets before... interesting!
I love them! Great beet taste without the mess.
I love yellow beets! They make so much less mess than the traditional color. Hadn't thought of pickling them though.

Hhmm-- I'm going to have to stop at the co-op tomorrow!
I usually pickle them to put in arugula salad with candied walnuts and goat cheese.

Wow, I think of yellow beetroot as pretty hard to come by - but evidently not to much in your world! Gorgeous in cross-section, too.
They are hard to come by at the farmer's market, but I can get them at the nicer grocery store most of the year. Thanks.
